Chili Verde Carnitas Burrito
Ingredients:
Carnitas:
· 2 lbs Pork Shoulder (1-2inch Cubes)
· 7 Tomatillos
· 2 Jalapeno
· 3 Poblano
· 1 Onion
· 2 Garlic Clove
· 1 Lime
· Salt to Taste
· Fresh Cilantro or Parsley
· Salt
· Cheese
· Tortilla
Yellow Rice:
· 2 Cup Jasmine Rice
· 1 ¼ Cup Carnitas Stock
· 1 ¼ Cup Water
· 2 tbs Sazon Safron
Beans:
· 1 Can Red Kidney Beans
· ½ Cup Carnitas Stock
· ½ Cup Water
· 1 tbs Sazon and Cumin
Salsa:
· 5 Tomatillos
· 1 Jalapeno
· ½ Onion
· 2 Garlic Clove
· 1 Lime
· 1 tsp Chicken Bouillon
· Salt to Taste
· Fresh Cilantro or Parsley
Chipotle Crema:
· 2 Chipotle in Adobo
· 1 Cup Mayo
· 1 Cup Greek Yogurt
· 2 tbs Onion, Garlic and MSG
· 1 Lime
· 1 tbs Whole Milk
Method:
Carnitas:
1. Place the veggies into food processor and blend until smooth
2. Dice the pork shoulder into cube and place it into a large pot. Season with salt then pour over the processed veggies
3. Place into a 275° oven for 3-4 hours or until the meat is extremely tender
4. Once tender, remove from heat and allow to cool inside cooking liquid
5. Reserve the cooking liquids for the rice and beans
6. Broil the meat right before serving
Yellow Rice:
1. In a medium pot, combine the rice, stock, water and seasonings
2. Heat on medium high, once simmering place on the lid and reduce to low
3. Cook for 20 minutes then remove from heat, rest for an additional 10 minutes
4. Fluff the rice right before you eat
Beans:
1. In a medium pot, combine the beans, stock, water and seasonings
2. Cook on medium, once simmering place on the lid and cook on low for 30 minutes
Salsa:
1. Cut the veggie in half, place on a sheet tray and broil for 5 minutes
2. Using a food processor, blend the veggie along with a spoonful of chicken bouillon
Chipotle Crema:
1. Using a food processor, blend the ingredients until smooth
Breakfast Burrito:
1. To construct the burrito, place down the tortilla with a scoop of rice, followed by a generous portion of bean, a massive handful of carnitas, cheese, salsa and a drizzle of the chipotle crema. Wrap up, Fry and Enjoy!
