Chili & Cornbread

Ingredients:

Chili:

·               1-2 Lbs Ground Beef

·               6 Dried Guajillo Chilis

·               2 Pasilla Peppers

·               3-6 Chili de Arbol

·               3 Roma Tomatoes

·               1 Red Onion

·               1 Can Red Beans

·               1 Cup Chicken Stock

·               1 Cup Beef Stock

·               4 tbsp Cumin

·               2 tbsp Cinnamon

·               2 tbsp Smoked Paprika

·               1 Sazon Safron Packet

·               2 tbsp Dried Mustard

·               2 tbsp Chili Powder

·               Salt & Pepper to Taste

·               Corn

·               Jalapeno

·               Sour Cream (optional)

·               Shredded Cheese (optional)

·               Fritos (optional)

Cornbread:

·               ½ Cup Beef Tallow

·               2 Cup Yellow Cornmeal (175g)

·               ½ Cup Sugar (100g)

·               1 tsp Salt (6g)

·               1 tsp Baking Powder

·               1 tsp Baking Soda

·               2 eggs

·               1 ½ Cup Buttermilk

·               Fresh Corn (optional)

·               Chopped Jalapenos (optional)

Chili:

1.            Boil the chicken and beef stock, add in the dried peppers, then place on the cover and let steep for 10 minutes

2.            Place the pepper and steeping liquid into a blender along with the tomatoes and red onion blend for 30 seconds

3.            In a large stew pot, sear the beef on high heat. Season with the spice blend

4.            Pour in the blended pepper mixture, stew for a few minutes before adding the beans

5.            Cook for at least 30 minutes or up to 2 hours

Cornbread:

1.            Begin by preheating a cast iron pan in a 400° oven, with a few tbs of beef tallow

2.            In a large bowl combine the beef tallow with the buttermilk and two eggs

3.            Add in the dry ingredients, as well as the corn and jalapenos

4.            Pour the cornbread mixture into the hot cast iron and place back into the oven for 20-25 minutes

5.            Remove from the oven, then brush with the homemade honey butter

Chili & Cornbread:

1.            In a small bowl, place down two hearty scoops of chili, a sprinkle shredded cheese, a dallop of sour cream, a handful of: onions, corn, jalapenos, Fritos, a generous drizzle of hot sauce and finally the sweet and delicious cornbread.
