Halal Cart Chicken & Rice Bowl

Chicken:

·         1-2 lbs Chicken Thighs

·         Marinade:

o   2 tbs Harissa

o   1 tbs Garlic Powder, Onion Powder, Sugar

o   1 Packet Sazon Safron

o   Salt & Pepper to Preference

Rice:

·         1 Cup Rice

·         1.5 Cup Chicken Stock

·         1 Packer Sazon Safron

·         1 tbs Harissa

 

Red Sauce:

·         2 Chipotle

·         ¼ Cup Vinegar

·         ¼ Cup Water

·         1 tbs Sugar and Harissa

 White Sauce

·         1 Cup Mayo

·         3 tbs Buttermilk

·         Fresh Dill (Diced)

·         Fresh Chives (Diced)

·         2 tbs Onion Powder, Garlic Powder & MSG

·         1 tbs Sugar

·         1 tbs Vinegar

·         Salt & Pepper

 

Chicken:

1.      Dice the chicken into cubes and combine with the marinade.

2.      Marinate for At least 30 minutes

3.      Air fry at 450 for 12 minutes

Rice:

1.      Combine all ingredients in a medium pot. Cook over medium high heat until it boils. Cover with a lid and reduce to low. Cook for 20 minute remove from the heat and rest for 10 minutes

Red Sauce:

1.      Blend all ingredients

White Sauce:

1.      combine all ingredients

Halal Cart Rice Bowl

1.      Serve the chicken with a handful of lettuce, tomatoes , rice and both the sauces
