Orange Chicken

Ingredients:

Orange Chicken:

· 1-2 lbs Chicken Thigh

· 2 tbsp Sugar (30g)

· 2 tbs MSG

· 2 tbs Salt

· 3 tbs Black Pepper

· ½ Cup Corn Starch

· ½ Cup All Purpose Flour

· 1-2 Eggs

· Green Onions

·  500ml High Smoke Oil

Sauce:

·  1 Orange

·  2 tbsp Soy Sauce (30ml)

·  1 Red Chili (Diced)

·  1 Garlic Clove (Diced)

·  3-4 tbs Brown Sugar (50g)

·  2 tsp MSG

·   2-3 tbsp Fresh Ginger (Grated)

·   2 tsp Corn Starch

Orange Chicken:

1.   Begin by dicing the chicken into cubes

2.  In a bowl, mix the corn starch, ap flour, msg, sugar, salt and pepper. In a separate bowl, scramble the eggs

3.   Place the chicken cubes into the dry dredge, then place into the egg mixture, then back into the degree. Make sure to fully coat each piece

4.  In a large Wok or Cast-Iron pan, fry the chicken in batches in 375° oil for roughly 5-7 minutes. Once golden brown and crispy set aside on a wire rack

5. Prepare your sauce by combining the garlic, chili, ginger, soy sauce, orange juice, sugar, msg and corn starch

6.  Pour the excess frying oil into a metal bowl, pour back in the sauce and cook until it thickens to your decried consistency

7.  Place back in the fried chicken and mix until fully coated

8. To plate, over a bed of rice, place down three large scoops of the orange chicken, followed by a handful of green onions. Enjoy!
