Creamy Sausage Pasta
Ingredients
· 4 Fresh Tomato
· 2 Garlic Cloves
· 1/3 Cup Heavy Cream
· 3 Sausage
· Grated Parmesan
· Sliced Pepper & Onion
· 250g Spaghetti
· Seasonings: 1tbs Red Pepper, Black Pepper, Oregano, Basil
Instructions:
1. In a pot, Cook the tomatoes, garlic and a pinch of salt in Olive Oil on low temperature. Place the lid on and simmer for 10 minutes
2. Blend sauce until smooth, then set aside
3. Boil the Spaghetti for 9 minutes, reserved a cup of the pasta water
4. Remove the sausage from the casing, sear for 5-7 minutes. Set aside
5. In the same pan, cook the pepper and onion. Deglaze the pan using the moisture from the vegetables
6. Add back in the sausage, pour in 1 cup of tomato sauce, heavy cream and fresh Parmesan (add in pasta water to your preference)
7. Bring the sauce to a simmer before adding it to the dry seasoning.
8. Stir in the pasta and serve with a drizzle of olive oil, fresh cracked pepper, fresh Parmesan and basil. Enjoy!
