Chopped Cheese

Ingredients:

Bread:

·         2 ½ tsp Instant Yeast (8g)

·         297 ml Water (302g) (90° F)

·         597g Bread Flour

·         2 ½ tsp Sugar (33g)

·         2 tsp Sea Salt (15g)

·         ¼ Cup Softened Butter

·         1 Egg White

Pickled Jalapenos:

·         2 Large Jalapenos

·         2 Garlic Cloves

·         Fresh Oregano & Thyme

·         1 Cup White Vinegar

·         Salt & Pepper

Burger Sauce:

·         3 tbsp Mayo

·         3 tbsp Mustard

·         3 tbsp Ketchup

·         2 tbs Hot sauce (Upbeat Heat)

Chopped Cheese:

·         1 ½ lbs Ground Beef

·         1 Large Onion (Sliced)

·         1 Heirloom Tomato

·         Shredded Lettuce

·         American Cheese

·         Salt & Pepper

Method:

Bread:

1.       Preheat oven to 375° F

2.       In a small container, whisk the water, yeast and a pinch of sugar. Set aside for 5 minutes until bloomed

3.       In the bowl of a stand mixer, mix the flour, salt and remaining sugar. Add in the bloomed yeast and mix for 3- 5 minutes or until the dough begins to turn smooth. Slowly add in the softened butter and mix for an additional 5-8 minutes

4.       One a smooth dough ball as formed, place in a greased bowl and cover with a damp towel or plastic wrap. Let rise for 1 hour

5.       Once the dough has double in size, punch down and remove all the trapped air. Using a scale divide into 5 pieces (around 250g).  Flatten each piece of dough into a large rectangle and roll the dough until it forms a log. Pinch off the seams and edges to ensure the dough forms correctly. Repeat with each piece of dough. Place the rolls onto a parchment lined baking sheet with another inverted sheet over top. Let rise for 1-2 hours

6.       Before placing in the oven, brush the rolls with an egg white and water slurry to help with even browning

7.       Bake for 15-20 minutes or until Golden Brown

Pickled Jalapenos:

1.       Slice the Jalapenos and place into a mason jar or lidded bowl

2.       Combine with the Garlic Cloves, Herbs, Vinegar, Salt and Pepper

Burger Sauce:

1.       Combine Mayo, Mustard, Ketchup and your favorite Hot Sauce

Chopped Cheese:

1.       Form the ground beef into quarter pound patties and season with salt and pepper

2.       On a hot pan, sear two burger patties as you would a normal burger

3.       Once you flip the burgers, toss in the sliced onions and pickled jalapenos. Chop everything together and place over three pieces of American Cheese and let rest until the cheese has fully melted

4.       To construct the sandwich, on a toasted roll slather on some burger sauce, followed by the chopped burger patties, then slicef heirloom tomatoes seasoned with salt and pepper and topped with a little shredded lettuce. Serve with French fries or your favorite chips. Enjoy!
