Chicken Cesar Salad Wrap

Ingredients:

Cesar Dressing:

·               1 Clove Garlic

·               1 Lemon

·               2-3 Anchovy Filet (Minced) or 2-3 tbsp Anchovy Paste

·               ¾ tsp Salt

·               ¾ tsp Dijon Mustard

·               6 tbsp Vegetable Oil

·               6 tbs Extra Virgin Olive Oil

·               1 large Egg Yolk

·               1 tbsp Grated Parmesan

 

Cesar Salad:

·               1 Head of Romaine or Red Leaf Lettuce

·               1 Half Baguette

·               1 Large Chicken Breast:

·         Salt

·          Pepper

·          Oregano

·          Thyme

·          Red Pepper Flakes

·               Tortilla or Wrap

Cesar Dressing:

1.            Begin by slicing and juicing the lemon, separate the yolk from the egg and then mince both the garlic and anchovies, if necessary

2.            Once the ingredients are prepared, place all into a food processor and begin emulsifying. Start your blender on the lowest setting then gradually increase the speed until you have maxed out the blender. Mix until a thick dressing forms

3.            Place in the refrigerator until you are ready to construct the wrap

Roasted Chicken:

1.            Begin by butterflying the chicken breast, this allows it to cook faster and also allows you to instill more flavor with little to no marination time

2.            Once butterflied, generously coat the chicken in vegetable oil along with the spice blend listed above

3.            Sear the chicken in a hot cast iron pan until both sides are nicely seared and the internal temp reaches 150°-160°. The chicken will finish cooking off the pan. The internal temp should reach 165° before consumption

4.            Slice thin and set aside

Crouton’s:

1.            Cut the loaf into square inch cubes

2.            In a bowl, toss with vegetable oil and your favorite spice blend (I used Badia Complete Seasoning)

3.            Roast at 425° for 10-15 minutes, or until crispy

Cesar Salad Wrap:

1.            Slice the lettuce into large chunks and place into a large salad bowl

2.            Next, toss in the freshly roasted croutons, followed by a handful of parmesan cheese, fresh cracked pepper and then the homemade Caesar dressing

3.            Stir in the dressing fully, allow for an even coat across every piece of lettuce

4.            To construct the wrap, being by placing down a large scoop of the Cesar salad, followed by a generous amount of the roasted chicken, a sprinkle of parmesan cheese, then roll up tight and Enjoy!
