Carne Asada Burrito

Ingredients:

Tortilla:

·         2.5 cups All Purpose Flour (350g)

·         1 tsp Sea Salt (7g)

·         1.5 tsp Baking Powder (7g)

·         3 tbsp Vegetable Oil (33g)

·         ¾ Cup Warm Water

 

Salsa:

·         3 Roma Tomatoes

·         3 Fresno Chilies

·         3 Garlic Cloves

·         1 Sweet Onion

·         1 Lime

·         Salt & Pepper to Taste

 

Yellow Rice:

·         1 Cup Jasmine Rice

·         3 tsp Salsa/Sofrito

·         2 tsp Sazon, Adobo & Turmeric

·         Salt and Pepper to Taste

 

Carne Asada Burrito:

·         2 lbs Skirt Steak

·         4 Chipotle Peppers in Adobo

·         1 Lime

·         2 tbsp Cumin, Sazon, Chili Powder & Paprika

·         Shredded Cheese

·         Sour Cream

·         Salt & Pepper to Taste

 

Method:

Tortilla:

1.       Combine all ingredients except the water. Mix until a cornmeal texture forms

2.       Slowly add in the water and begin mixing

3.       Pour onto a flour surface and kneed until a smooth dough begins to form

4.       Cover and let rest for 20 minutes

5.       Divide into individual piece and using a rolling pin flatten each piece to your desired consistency

6.       Cook both sides on a ripping hot cast iron pan

 

Salsa:

1.       Cut each tomato and chili pepper in half and place onto an oven safe tray with the garlic cloves

2.       Fully coat in a high smoke point oil and salt before broiling in the oven for 2-7 minutes (depending on the strength of your oven)

3.       Once charred pour the entire tray into a blender, along with the juice of one lime

4.       Blend for 5 second and enjoy

Yellow Rice:

1.       In a medium sauce pot, combine the rice, salsa, seasoning & 1.5-2 cups of water

2.       Adjust heat to high and wait for the water to begin to boil

3.       Once you see signs of the water bubbling, immediately cut the heat to the lowest possible setting and place on the lid

4.       Cook for 20 minutes before removing from the heat and letting rest for an additional 10 minutes

 

Carne Asada Burrito:

1.       Roll the flank steak into a pinwheel and slice into thin strips (see video for reference)

2.       In a bowl, combine the chipotle pepper, lime juice and seasoning

3.       Using an immersion blender, fully blend the marinade until smooth

4.       Combine the steak strips with the marinade and let rest for at least 1 hour or up to 24 hours

5.       Sear the steak strips on a cast iron pan until medium rare (2 minutes per side)

6.       Dice the steak into small piece

7.       To construct the burrito, Place down your freshly made tortilla, followed by a good serving of the yellow rice, then the seared carne asada, grated cheese, sour cream, and finally the fresh salsa. Wrap together tightly before searing on a cast iron skillet to make everything nice and crispy. Serve with yellow rice and Enjoy!
