California Burrito

Ingredients:

Carne Asada:

·         1-2 lbs Skirt Steak

·         ½ Juice of an Orange

·         ½ Juice of a Lime

·         2 tbs Chili in Adobe

·         2 Galic Cloves

·         1 Packet Sazon Safron

·         ¼ Cup Oil

·         Salt & Pepper to Taste

·         Fresh Cilantro or Parsley

·         Tortilla

·         Shredded Cheese

Salsa:

·         3 Tomatillos

·         2 Roma Tomatoes

·         1 Jalapeno

·         1 Onion

·         1 Garlic Clove

·         2 tbs Carne Asada Marinade

·         Salt to Taste

·         Fresh Cilantro or Parsley

Guacamole:

·         2 Avocados

·         ½ Diced Jalapeno

·         ½ Diced Onion

·         ½ Juice of a Lime

·         2 tbs Salsa

·         Salt & Pepper to Taste

·         Fresh Cilantro or Parsley

French Fries:

·         2 Russet Potatoes

·         Salt

Method:

Carne Asada:

1.      Roll the skirt steak into a pin wheel and slice against the grain into strips

2.      Blend the chili, garlic, Sazon, oil, citrus juices and herbs (Reserved 2 tbs for salsa). Pour over the meat and marinate for at least 30 minutes

3.      Cook the meat on a ripping hot pan for 2-3 minutes a side. Remove from the pan and rest. The meat should be very rare. You want the meat to be slightly underdone, so you can reheat before you construct the burrito

4.      Slice right before burrito construction

Salsa:

1.      Slice all the veggie in half and place onto a oiled sheet tray. Broil for 5 minutes

2.      Allow the veggies to cool, then place into a food processor along with a handful of fresh herbs and the reserved marinade

3.      Pulse 3-5 times or until you reach your desired consistency

Guacamole:

1.      Place all the ingredients into a molcajete

2.      Smash until you have reached your desired consistency

French Fries:

1.      Peel the potatoes and cut them into fries

2.      Place the potatoes into a bowl of salt water to remove excess starch. Allow them to rest for at least 30 minutes

3.      Dry off the potatoes on paper towels

4.      Heat oil to 275℉, fry the potatoes for 7-10 minutes until the are barley turning gold. Remove from the oil and increase the temperature to 400℉

5.      Fry again for an additional 5 minutes, place onto a wire rack and generously season.

6.      Place the fries into a 200℉ oven to rest

California Burrito:

1.      To construct the burrito, place down the tortilla with a dab of the guacamole, followed by a generous handful of the French fries, a hearty portion the carne asada, some shredded cheese, the fresh roasted salsa & sour cream. Wrap up and Enjoy!
