Breakfast Burrito
Ingredients:
Breakfast Burrito:
· 4-6 eggs
· ¼ Stick Butter
· ¼ Cup Heavy Cream
· Bacon
· Cheese
· Tortilla
· 1 lb Ground Pork
· 2 tbs Fresh Sage (chopped)
· ½ tbs Salt
· 2 tsp pepper
· 2 tsp Onion Powder
· 2 tsp Garlic Powder
· 2 tsp MSG
· 2 tsp Sugar or Maple Syrup
Salsa:
· 3 Tomatillos
· 1 Jalapeno
· 1 Onion
· 1 Garlic Clove
· Salt to Taste
· Fresh Cilantro or Parsley
Home Fries:
· 2 Russet Potatoes
· Salt
Method:
Breakfast Sausage & Bacon:
1. In a bowl, combine the ground pork and seasoning. Mix by hand then let rest in the fridge for at least 30 minutes
2. Cook the bacon to you desired consistency
3. In the bacon fat, cook the breakfast sausage. Chop into chunks using a spoon or spatula
Eggs:
1. In a bowl, grate the butter into the eggs and stir well with the heavy cream
2. Cook on a medium low pan will constantly stirring. Remove from the heat right before the eggs finish to prevent overcooking
Salsa:
1. Slice all the veggie in half and place onto a oiled sheet tray. Broil for 5 minutes
2. Allow the veggies to cool, then place into a food processor along with a handful of fresh herbs and the reserved marinade
3. Pulse 3-5 times or until you reach your desired consistency
Home Fries:
1. Peel the potatoes and cut them into cubes
2. Place the potatoes into a bowl of salt water to remove excess starch. Allow them to rest for at least 30 minutes
3. Dry off the potatoes on paper towels
4. Heat oil to 275℉, fry the potatoes for 7-10 minutes until the are barley turning gold. Remove from the oil and increase the temperature to 400℉
5. Fry again for an additional 5 minutes, place onto a wire rack and generously season.
6. Place the fries into a 200℉ oven to rest
Breakfast Burrito:
1. To construct the burrito, place down the tortilla with a dab of the scrambled eggs, followed by a generous handful of the home fries, a hearty portion shredded cheese, bacon, sausage & the fresh roasted salsa. Wrap up and Enjoy!
