Bacon, Egg & Cheese

Ingredients:

Bagel:

Dough:

·         297 g Water (95℉)

·         1 tbsp Instant Yeast (10g)

·         500g Bread Flour

·         1 tsps Sea Salt (8g)

·         2.5 tbsp Sugar (30g)

·         1 egg

·         6 tbs Barley Malt Syrup or Molasses

·         Everything Bagel Seasoning

·         Asiago Cheese (Grated)

Bacon, Egg & Cheese Sandwich:

·         Bacon

·         4-6 Eggs

·         3-4 tbs Butter

·         ¼ cup Heavy Cream

·         American Cheese

Method:

Bagel:

1.       In a bowl combine the yeast, water, sugar and 2 tbs syrup. Stir and set aside until bloomed (5-8 minutes)

2.       In a large bowl, add in the dry ingredients, followed by the yeast mixture. Mix using your hands for 10-15 minutes. Kneed continuously until a very dense and completely smooth dough is formed. The dough should have little, to no tackiness

3.       Place the dough ball into a lightly greased bowl before applying a damp kitchen towel over the top. Proof for 1 hour

4.       Once proofed, punch down the dough to release the gas and place onto a clean work surface and divide into eight even dough balls.

5.       Place back over the damp kitchen towel and let the dough balls rise for another 10-15 minutes

6.       Using your thumb and pointer finer pinch hole through the ball to create the classic bagel shape. Make the hole roughly 0.5-1 inch in diameter

7.       In a large bowl of boiling water add a pinch of salt and the rest of the syrup(~4tbs). Boil the bagels for 30 second on each side. Then place onto a wire rack line baking sheet to dry

8.       Place the boiled and dried bagels onto another heavily oiled baking sheet. Brush with egg wash and sprinkle over the Everything Bagel Seasoning and Grated Asiago

9.       Bake at 425℉ for 25 minutes

Scrambled Eggs:

1.       Crack 4-6 eggs into a bowl, along with a ¼ cup of heavy cream and a 3-4 tbs butter that is grated or chopped into small cubes

2.       Mix thoroughly, then pour into a skillet heated over medium low. Constantly stir until an ultra-creamy scrambled egg forms

3.       Remove from the heat and place into a bowl until the sandwich construction

Bagel Sandwich:

1.       Fry off the bacon to your desired preference

2.       To construct the sandwich, start with the fresh baked and toasted bottom bagel, followed by some classic tangy ketchup, the perfectly crispy bacon, the ultra-creamy scrambled eggs and finally the delicious and homemade bagel top. Enjoy!
